Quick answerOyster Diving appears at restaurant level 9 in full-release gameplay. The tutorial directs the player to put on a mask, head for the coastal rocks, dive for fresh oysters and bring them back to the kitchen.

Unlock Oyster Diving

Do not confuse oysters with fishing. The supplied release footage shows Oyster Diving unlocking much earlier than the separate Fishing system.

Where to look

Head toward the coast and rocky water-access area indicated by the Oyster Diving objective.
Enter the water with the required diving setup.
In the co-op footage, oyster targets become visible underwater and are collected from the seabed / rocks.
Ancient Coins can also appear underwater, so not every glint is necessarily the oyster you need.

Preparing oysters

The same co-op session shows the players buying an Oyster Prep Table before handling the catch, then shucking the oysters back at the cafe. The complete recipe value and every oyster dish are not yet verified from the supplied sources.

Fishing is a different unlock

A separate full-release playthrough states that Fishing becomes available at level 20. Oyster diving starts at level 9 — there is no need to wait until level 20 to go in the water for oysters.

Troubleshooting note

One long co-op video shows a temporary freeze while collecting underwater items. That is a player-session observation, not proof of a universal bug.
